Sunday Lunch | Fig, Strawberry and Almond Tart




Sunday lunch is a tradition in my boyfriend’s family and I try to add some color by testing out new deserts on them. I was inspired by a recipe I saw on Laura Vitale’s YouTube channel and 'kicked it up a notch' with my flavor combination. You’ll love the taste of this fig and strawberry tart with a crunchy bite of almonds sprinkled throughout. The tart was a crowd pleaser this weekend and vanished from the table within minutes.


Tart Base
2 ½ cups of All Purpose Flour
¼ cup of Granulated Sugar
1 ½ tsp of Orange Zest
¼ tsp of Salt
1 tsp Vanilla extract
¾ cup of Unsalted Butter, cold and cut into bite size pieces
¼ cup of Vegetable Shortening, cold and cut into bite size pieces
3 Egg Yolks
A Few Tablespoons of Ice Water

Filling
1 cup Fig jam
2 cups sliced Strawberries
¼ cut coarsely chopped Almonds

Egg Wash, 1 egg beaten with a tablespoon of water or milk
1.    In the bowl of food processor, add the flour, vanilla extract, orange zest, salt and sugar and mix briefly until combined well.
2.    Add the cold butter and shortening and mix until the butter and shortening are well distributed throughout the dry ingredients. You’ll see bits of them throughout mixture.
3.    Add the 3 egg yolks and mix until the dough starts to come together.
4.    With the mixer running, add in one tablespoon of ice water at a time until the dough starts coming together well.
5.    Take 1/3 of the dough and form a small disk. Take the remaining dough and form a larger disk. Wrap them both with plastic wrap and cool them in the fridge for an hour. You want this dough to stay cool so butter and shortening do not melt.
6.    Preheat the oven to 375 °F or if you’re working with the metric system, 190 °C.
7.    Take the dough out for about 10 minutes before you start rolling it. Grease a 9” tart pan with a removable bottom or one of those cool silicon baking pans as I used.
8.    On a lightly floured surface, roll out the bigger piece of dough into a 12 inch circle and place it in the tart pan (make sure the sides are over hanging a bit).
9.    With a fork, poke holes in the dough so it can breath and will not puff up when baking
10. Line the tart shell with aluminum foil and fill with either dried beans or rice. Bake the tart shell for 15 minutes.
11. Remove from the oven and remove the aluminum foil with the beans, allow to cool slightly.
12. Fill the tart shell with the jam making sure to smear it evenly. Microwave jam for a few seconds so that it is easier to spread.
13. Line the jam covered tart with your strawberries and sprinkle in your chopped almonds.
14. Roll out the smaller disk into a 10 inch circle on a floured surface and cut 1 inch strips out of it with a pastry cutter.
15. Lay the slices over the fillings in a crisscross pattern diagonally. Pinch the strips with the over the overhanging dough and then using the palm of your hand, push down on the edge of the pan to cut off excess dough.
16. Brush the top with the egg wash and place the tart in the oven to bake for about 20 minutes or until the top is lightly golden.

Allow to cool completely before serving and serve with your favorite French vanilla ice-cream or fresh whipped cream.

Balance

 


The cool breeze falls upon my face as I push my feet off the ground enjoying the splendor of the sun. I quickly fall as there is but a feather floating slowly back onto the opposite seat of the seesaw. The seesaw is symbolic of the balance of life. There is a time for everything in life. With two proportionate people, one can be lifted and fall gracefully; enjoying the summer sun as it transitions to the evening sky filled with the stars.

Think of the balance that creates a perfect moment for sitting on the seesaw. Rising and falling, a feather will not give you the sensation of flying high in the sky, extending your arms as if a bird.

Include delectable morsels in this metaphorical exploration of the balance of life. There are times when indulgent behavior can be enjoyable. As with the feather on the opposite side of the seesaw, perhaps indulging in cake alone may not taste as sweet as celebrating with a friend. To fully immerse yourself in a mouth-watering experience you must do so at the right time; balancing indulgent moments in your life.
 
Sweets, cakes, extravagance … see yourself as light as the feather floating alone then see yourself immersed in the atmosphere attached to the tail of a Red Tail Hawk. You’re soaring above the world in ecstasy but would not be able to fully balance in the sky without the addition of the rest of the red tail feathers. Enjoy life in moderation and at the right time. For now, Let’s eat some cake.

Life of a TEFL Conversation Teacher | Cake Boss

So luckily my job in Italy is not to teach students the basics of English Grammar but to stimulate conversations in English. This is a difficult task because students only want to share their opinions when they are interested in the topic. If they are not interested you will hear Crickets. 

So I have been in Italy for a little over a month. I have done lessons to get to know the students, assess their english, spoken about Philadelphia and Colloquial English/Slang. These lessons were very interesting and did get the students involved but I was having trouble creating conversation and getting them to ask questions.

This past week I started a new lesson on Cake Boss or Il Boss Delle Torte, as renamed on Italian TV. The students were excited about this lesson and were speaking a ton in class when I initially introduced it. The structure of the lesson was like this:


Have the students tell me about the Show... (2m)
Watch a short clip (3m) - Lexy's Cake for her Birthday. California Beaches/New York cake falls and Buddy and team problem solve.

Discuss Clip: (5m)

Who was the client? 
What kind of cake did they want? Description, Flavor (Gusto)?
Who are the characters in this clip?

Setup
Speak to them about the scenerios. Explain a little. Then Ask questions about the types of vocabulary they might need.  (write these on the board) (10m)
What types of questions does Buddy need to ask to get a good idea of the cake he should make?
What details do the Clients need to give Buddy for the perfect cake?
Some flavors of cake?
Some types of Fruit?
Ingrediants to make a cake?
Shapes?
Break students up into groups and give out scenarios to different groups (2m)
Group Work (20m) 
Break students into groups of 4-5
Hand out Scenarios and explain them to the students. Give them a length to follow and let them know they can either write a paragraph or a dialogue but it should be at least 6-8 sentences long.
Scenarios: 
  • Buddy sits with you (new Client) while you explain the perfect birthday cake for your Sweet Sixteen. 
  • Maurizio and you are delivering a cake but he slips on a banana peel and the cake crashes to the ground. What do you do?
  • Buddy sits with difficult Client who is not sure about what kind of cake he whats.  What would you do to get a good idea of the Client’s perfect cake?
  • Your getting Married next week! You need to give Buddy a very clear idea of the perfect cake for your ________________ themed wedding!
  • A Client comes into the bakery to see their cake. You forgot to finish it! What do you do?
  • It is your Mother’s 50th Birthday. She loves animals and _______________. Describe the perfect cake for her to Buddy.
  • Your best friend is moving to Vegas, Nevada to persue his dream of being a Professional Poker Player. Describe the perfect cake for his going away party.
Presentations (20m) 
Leave at least 20 minutes are the end of class for presentations. For some of the groups you have to ask questions at the end or ask the other students what they would have done with the scenario. 
So I would call this my first successful lesson because I had most students engaged and speaking in English. They all described their scenarios and gave thought out solutions or described the perfect cake for their situation. After a few of the presentations, others students asked questions or gave feed back. I love this show and cake so perfect match.

So I love pumpkin anything., Pumpkin Spiced Lattes from Starbucks, Pumpkin Penne Pasta, Pumpkin Carving, Pumpkin Seeds, Pumpkin Pie ... and you get the idea.


First Order of Business: Find Pumpkin.

So it's October and I only think about 1 thing...    Pumpkin.
 Problem is, I cannot find any pumpkins! Although I did have had delicious Pumpkin Tortellini the other day for dinner so I know it exist. The search continues and updates will be posted.

Un bel caffè con Le "Golden Girls"

So from arriving in Italy on September 29th to today, October 14th, things have been a little hectic and a lot of work. I have been meaning to sit down and write a blog about my experiences whilst in Italy but the more I contemplated what I should focus on the more I procrastinated. Therefore I think this post with be an introduction to my
  Italian Experience.

During my years at Temple University, I studied Italian because I enjoyed it. The classes, the language and my peers really made the completion of my minor in Italian more enjoyable than not. When previously asked why I haven't been to Italy my response was always the same. I had not found the perfect opportunity that would take me here and I did not want to just experience Italy as a tourist. So with the help and support of Professoressa Cristina Gragnani, I successfully applied and was accepted into the SITE Program in the Lombardy region of Italy.

I have been living in Tradate and working in Saronno, Italy for two weeks now and have no complaints. Every move comes with a learning curve. Italy is a brand new country so getting used to the bureaucratic way things are done has been a challenge; this was expected with embarking on this new adventure. All in all, I am pretty stoked. I live with Silvia. She is the Vice Presidente of the Technical High School. I have a range of students in my classes, from students who are in their first year of high school to 5th year high school students as old as 20 years. This is my first time as an English Teaching Assistant so I have been working on perfecting my lessons for the different levels of english. Some of the classes are easy and the students are excited to speak english and share their opinions. Others stare at me as I try to pull out any enthusiasm about any subject possible which I am not always successful.

As introductions go I could continue writing but I'll stop before I ramble (If I haven't started already). I have just come back from coffee with Silvia and her group of friends; I like to call them the 'Golden Girls'. They are really friendly and helpful in improving my Italian with every coffee date. I am working on a lesson on Cake Boss and trying to find activities for the lower level english classes. I want to get them excited and speaking in English. My Challenge: And I accept.
